Tomato & Basil Soup

This tasty soup is wonderful to have during the Winter months and as well as during Summer. I just made mine, had it and decided to share with you this amazing soup recipe. As we are entering the Winter Season in Europe, that is how I made mine:

You will need:

a juicer

a food processor

2 carrots, 2 celery stalks, 1/2 raw beetroot

3 tomatoes

2 avocados

fresh parsley, basil, coriander

or any other herb of your choice

1/2 lemon juice, ginger, chilli pepper

turmeric, cumin (ground), cayenne pepper, oregano, paprika, black pepper

white pepper

cherry tomatoes

The amount of the above ingredients is dependant of your own choices.

You can also add garlic, spring onions or onions and any other condiments of your choice. For the Winter months you may add more avocado to get that fantastic creamy texture. However, during Summer, you may add less of it and more of tomatoes for a lighter consistency.

How to :

You may start by placing your carrots, raw beetroot and celery into your juicer.

Then place the juice into the blender together with all the remaining ingredients, except the cherry tomatoes. Blend them all and place your soup into a bowl.

Cut the cherry tomatoes in half and add them into your delicious soup. If you wish, add some chopped herbs, avocado chunks and oregano on top for a nice presentation.

I did not add salt on mine as I found the tomatoes and herbs gave it a great taste, but feel free to add pink Himalayan salt.
