Crunchy sprouted quinoa sushi

This tasty meal is a great choice as a starter, snack or main course.

It is very easy to prepare.

You will need:

raw quinoa seeds

nori sheets

lemon juice

chopped ginger

chopped chilli peppers

cumin powder

chopped avocado

chopped bell peppers

spring water

vegetable board

knife

sushi rolling mat (optional)

Himalayan Pink Salt (optional)

Any other raw vegetable or condiment of your choice

How to :

Pour the quinoa in a sprouting jar, (if you do not have one,  place it in a bowl) and add water.

Leave them soaking for at least 24 hours.

Rinse the water out and leave the sprouting jar upside down (in an angle to the side, so there is some air going in through the holes of the lid).

If you do not have the sprouting jar, place the quinoa in a strainer.

Then place a cup into a bowl and the strainer on top of the cup.

Ensure that the water is draining out and there is plenty of air within the quinoa seeds. Like the sprouting jar, you may leave the strainer in a side angle.

Once the quinoa seeds are dried, you can use whatever you wish to give it some flavour to the seeds. I love lemons. So I squeeze them into the quinoa.

Place one nori sheet on the vegetable board. Spread a little bit of quinoa on it. Keep the seeds in a line. Add small pieces of the other ingredients.

Roll the nori sushi and then use a bit of lemon to seal it at the end of the sheet. You may use the rolling mat, if you wish.

Cut the sushi into small pieces and voila. Your delicious meal is ready to be devoured.

Hope you enjoy it as much as I do.
